Mark McEwan, the owner of the restaurant, is well known in the culinary community for his distinctive style of cooking that captures the essence of classical cuisine while adding nuances of contemporary flavours to the dishes. In his early years, he was executive chef at Toronto's upscale Sutton Place, in addition to opening ground-breaking Toronto institutions like North 44, Bymark and ONE Restaurant. As a result, Chef McEwan opened three unique Fabbrica Restaurant locations with his ingredient-driven Italian fare.
