About PalaTable Catering & Events

Fusion Chef Intrusion Foods is a full-service catering and event company based in Vancouver, BC. Apart from not only creating and streamlining the best food and beverage menus for your event but also providing event personnel services, event planning, rentals, and full-service packages with everything all in one for your peace of mind before your big day.

Experience

Since graduating from the Dubrulle Culinary Institute in 2008 and launching his personal chef business in 2009, Chef James Green, the CEO and founder of Fusion Chef Intrusion has been focused on providing exceptionally created dining experiences across Vancouver and the Lower Mainland.

In August 2014, Chef James was brought on as the executive chef of the Locus Restaurant + Lounge in Vancouver and with help of his loyal and fearless team of culinary masters, they transformed the Locus into a well-oiled culinary underdog in the city, offering creative and provocative “Global Fusion” dishes that work and delight.

Fusion Chef Intrusion was established during the pandemic in 2020 when Chef James lost his job in the restaurant industry starting only doing private chef services and small events. Since then, he has built an amazing full-service catering and event planning company complete with an amazing staff of chefs, mixologists, event staff and logistics coordinators that have worked nearly 100 weddings and events since its inception and going into 2023.

Cuisine

The menus have a seasonal and local focus on fusion-inspired food which is the culinary vision of Vancouver-born, bred and formally trained chef and owner James Green to celebrate the “melting pot” of the diverse cultures, religions, ethnicities, and trends of that grace this beautiful city. He also loves to celebrate and showcase the bounty of amazing ingredients from local farmers, purveyors, and Artisan suppliers that the area also has to offer.

Chef James uses all these local elements, with seasonal availability always kept in mind, to get creative and fuse global inspirations together on one plate and in one taste – which is basically his definition of true “Global Fusion” cuisine which he specializes in.
